Gajar ka Halwa is a sweet dish which is very tasty & simple to make. I have learnt this to make from my mother. Adding cardamom powder & cashewnuts increases the flavor & also gives a rich texture to this dish. One of my favorite sweet dishes which I commonly prepare in my kitchen & store it in refrigerator. We used to make this using Delhi carrot.
This sweet can be eaten all alone or else with vanilla ice-cream.

Method:
- Peel off the carrots. Grate them finely.
- Heat a kadai & add finely grated carrot & milk. Nicely mix both the items in medium flame.
- When milk is completely absorbed, add sugar & mix them nicely till the sugar is absorbed.
- Add ghee to it so that it doesn’t stick to bottom. Switch off flame. Add Cardamom powder for aroma & taste. Garnish with cashew nuts.
- Let it cool for a while.
