Tricolor Rice


Happy Independence Day to you all. Today on this auspicious day, i would like to present a variety in rice – Tricolor rice.Orange color is made using carrot and green color using corriander leaves. So we can consider this dish to be known as healthy dish too as carrots are good for our eyes and corriander leaves are very useful to clean our kidneys. So guys lets make this independence day a healthy and delicious food day too. Daily using ingredients are used by me for making this beautiful rice. Tricolor rice will surely attract our childrens due to its color, texture and taste. Easy to make in very less time is its specialty. So come on lets make this day a very special day.   • Basmati Rice – 1 1/2 cup
  • Cinnammon Stick – 1no
  • Clove – 2nos
  • Cardamom – 1no
  • Bay leaf – 1no

Ingredients of Green Rice:

  • Corriander leaves – 2cups
  • Fresh grated coconut – 2tbsp
  • Ginger – 1inch
  • Green chilies – 3nos
  • Oil – 1tsp
  • Salt as per taste.

Ingredients of Orange Rice:

  • Carrot – 3nos (grated)
  • Onion – 1no (finely chopped)
  • Chili powder – 1/2 tsp
  • Turmeric powder – 1/4tsp
  • Garam Masala powder – 1/4tsp
  • Oil – 1tsp
  • Salt as per taste.



  • Clean rice nicely in normal water. Add 2cups water and cook the rice.Take the whole spices in a muslin cloth and tie it nicely.
  • When water starts boiling, low flame and cook rice adding the tied spices muslin cloth (it gives nice flavor to rice). See to it that the rice is not over cooked.
  • When rice is properly cooked, remove the tied spices muslin cloth and drain water completely from cooked rice and allow it to cool.

Method for making Green Rice: 

  • Make a paste of all the ingredients mentioned above under green rice except oil and salt. Heat oil in a pan, add corriander paste and saute till water completly oozes out from the paste.
  • Then add adequate salt and 1cup of cooked rice.Mix them nicely so that the green corriander paste gets completly mixed with rice. Keep it aside.

Method for making Orange Rice:

  • Heat oil in a kadai. When oil turns hot, add chopped onion and saute till it turns slightly brown in color.
  • Add chili powder, turmeric powder, garam masala powder and adequate salt. Saute the masala in low flame for 1min.
  • Now add grated carrot and saute for a minute in low flame.
  • Add 1cup cooked rice and mix nicely. Switch off flame. Keep the rice aside.

Keep the balance white rice a side for dressing.



Rice Dressing Method:

  • Take a Cylindrical transparent glass. First add orange rice, then white rice and on top green rice in equal proportion.
  • Press them hard so that it gets tightly fitted in the glass.
  • Invert the glass upside down to a serving dish. Now orange color will be on top and green color at the bottom.
  • Indian Tricolor rice is ready to serve. Goes well with Coriander chutney or coconut chutney.
