Shahi Vegetable Kurma Recipe

Veg shahi korma  an authentic recipe of north India. This dish is rich,creamy,slightly sweet with full of cashew nuts and raisins. soft in color and yummy in taste. As it is less spicy,we can without any hesitant serve to children’s too. We can make this dish in very less time and can be setted as a delicious gravy during any main function and get together. Let’s get into the recipe and you can yourself  judge the taste and its richness by making this kurma in your kitchen. Your comments on this recipe is very much valuable for me.


  • Cauliflower – 1 1/2 cup(boiled)
  • Carrots – 1cup(chopped in cubes)
  • Potato – 1cup (chopped in cubes)
  • Beans – 1/2cup (chopped)
  • Paneer – 1cup (cut into cubes)
  • Chili powder – 1tsp
  • Turmeric powder – 1/2tsp
  • Garam Masala Powder – 1tsp
  • Cumin powder – 1/2tsp (optional)
  • Dry Fenugreek Leaves(kasoori methi) – 2tsp
  • Cashewnuts – 1/2cup
  • Coconut Milk – 1cup
  • Coconut – 1tbsp
  • Pepper powder – 1/4tsp
  • Ghee – 1/2 tsp
  • Oil – 1tbsp
  • Corriander leaves – 1cup (chopped)
  • Water as per requirement.
  • Salt as per taste.


  • Heat Oil and ghee in a pan. Add turmeric powder, a little chili powder, garam masala powder, cumin powder. Stir them nicely in low flame till the spices leaves its raw smell.
  • Add the potatoes and Fenugreek leaves and stir nicely.stir fry nicely till the potatoes turn slightly brown in color. They don’t need to cook completely. Then add Vegetables and paneer cubes and mix them in low flame. Add adequate salt and stirfor 3mins.

  • In the mean while take a blender, add cashew nuts, coconut and 1/2 cup water. Blend them to fine paste.
  • Then add coconut milk and turmeric powder. Blend them nicely to a crude paste. Pour the paste into the gravy and stir continuously.addwater as per requirement (I took 2cups of water).
  • High the flame and stir the gravy nicely. When the gravy starts to boil, low the flame and add pepper powder and ifrequired salt too.

  • Close the gravy with a lid and allow the vegetables to cook in the gravy.
  • When the vegetables are completely cooked, add the chopped coriander leaves.switch off flame.
  • Garnish with chopped cashew nuts and raisins(optional).
  • Shahi korma goes well with chapati, fried rice, biriyani.
